Fabrice Didier's Honey madeleines

  • 4 eggs
  • 2 egg yolks
  • 90 g of sugar
  • 40 g of honey
  • 125 g of flour
  • 5 g of baking powder
  • 150 g of butter
  • 4 g of salt

 

Whip the eggs, egg yolks, sugar and honey until you get a ribbon.

At the same time, melt the butter until it starts to turn light brown.

Slowly add the sifted flour, salt and baking powder to the first mixture and finish by adding the brown butter.

Butter and flour the baking tray, fill half-full with the madeleine mixture.

Preheat the oven to 200 °C and put in the oven for about 2 or 3 minutes.

The inside should be slightly uncooked, turn off the oven and leave in the oven 2 or 3 minutes longer. Turn on the oven for 1 more minute. Take out of the oven and let cool in baking tray.

For better results, prepare the mixture the night before and let sit one night in the fridge.
